As far as multifaceted watering holes go, Caringbah newbie Highfield is a doozy, boasting a classic Aussie sports bar crammed with screens, a modern bistro and a lounge bar, plus one of the biggest beer gardens going around. Not only is there a space to suit everyone, but you’ll find loads of great specials throughout, from $10 weekend cocktails in The Botanical, to $4.50 happy hour schooners in the Public House.
Opening its doors last month on the outskirts of Barangaroo, Solera is a plush new small bar with a penchant for proper French Champagne. Expect a healthy dose of velvet and marble, to complement the considered food and drinks offering, running to modern eats and supremely innovative cocktails. In an Aussie first, the tables here feature built-in cooling systems, ensuring some of the best bubbly quaffing you’ve ever experienced.
The Barber Shop crew have unveiled their latest project – a proper English pub named after the guy who would go on to become King William IV. Decked out with authentic building materials and vintage furniture sourced from across the UK, The Duke of Clarence sure looks the part, right down to the 12-metre long bar and the cosy library nook. Expect a huge array of spirits from the British Isles, a line-up of cask ales and some top-notch cocktails.
This season, luxury harbourside hotel Pier One is embracing summer with its very own pop-up pool bar. Dubbed simply The Pool By Pier One, it boasts an actual plunge pool, plus a private pontoon where guests can sip cocktails and tuck into Aussie summer fare – all with the Sydney Harbour Bridge working as a majestic backdrop. It’s open on a first come, first served basis, running until the end of February.
Billed as the world’s first rosé wine bar, Rosé Royale has landed in Potts Point, proving the ultimate addition to your summer sipping schedule. Expect an elegant drinking destination, with a menu full of sophisticated French fare, a clever selection of rose-infused cocktails and a crop of fine rose drops sourced from across the globe.
